12th Night Cake
A cake for the NewYear
You can make it without baking!
It's amazing what you can do with your favourite shop-bought fruit cake, a drop of alcohol and an artistic touch!
INGREDIENTS
I x9 in/23 cm round or 10 in/25 cm square bought fruit cake
2-3 tbsp/ 30-45 ml brandy or rum
Frosting
6 oz/175g caster sugar
pinch salt
egg white
I tsp/5 ml vanilla essence
6-8 oz/175-225 g whole
glace fruits, angelica and
silver balls, to decorate
METHOD
Prick the top of the cake several times with a skewer and pour over the alcohol. Leave 6-12 hours to settle, then place on the cake board.
Place the frosting ingredients in a bowl over a pan of hot water. Add 2-3 tbsp/30-45 ml water and whisk hard with electric beater for 5-7 minutes, until
the mixture is white, glossy, peaky and stiff Don't worry if it takes a little longer.
Swirl it quickly and softly all over the top and sides of the cake. Before the
top sets and forms too much of a crust, decorate the cake with the pieces of glace' fruit, angelica and the silver balls.>br>It will now keep well for several days in a cool dry place, until you're ready to cut it.
